Tor has an ash rind with a pure white interior which is quite firm when young but oozes from the rind when more mature. The flavour is lemon zesty and slightly spicy.
Characteristics: A fine layer of vegetable ash covers its naturally pale paste. Fresh and punchy when young, it develops a distinct peppery spiciness as the cheese ages.
Best with: a crisp, Loire valley Sauvignon Blanc.
