Suffolk’s answer to Saint-Marcellin, traditionally made, this soft cheese varies in flavour based on the diet of the cows, ranging from buttery in the winter to more grassy and vegetal during the summer months when they are out to pasture.
Characteristics: lemony in taste, silky in texture; as it matures, this cheese just gets richer and richer.
Best with: superb with a fruity wine.
