Taleggio has a deep pinkish-orange washed rind, the centre is pale ivory and supple, with a few holes here and there.
It melts in the mouth and the taste is beautifully full and fruity, with roasted nuts going into a long creamy finish.
Best with: Put some in your aubergine parmigiana or melt a slice in bread.
