A piece of straw runs through the centre of each Sainte Maure log which gives it the appearance of a tiny rolling pin. 

Characteristics: grey-mould rind with ivory paste; smooth texture; fresh, robust flavour with citrus overtones.

Best with:  place a small medallion on a pureed soup.
