Mr Walo, the creator, is a most distinguished affineur of Alpine cheeses. He uses only the finest raw milk, and his maturing cellars are adapted to the requirements of each of his cheeses. Red Wine Farmer is relatively small in size, which allows its red-wine brushed rind to add to its great pungency. This is affineur Walo’s strongest cheese.
Characterisics: it is bold, rich, sweet, and meaty in flavour, and it is impossibly creamy and silky in texture.
Best with: a medium-bodied white wine.
