Pecorino Coratino is aged for just 3 months, and you can taste the sweet freshness of the sheep’s milk.

Characteristics: round gentle flavour and a subtle fruity tang; as it matures, it becomes firmer in texture and brighter in colour.

Best with: it is just superb grated in to a tomato and onion salad, and it will add real character to a cheese board too, perhaps with a little honey on the side.
