Pavé Cobble, named after the cobbled roads of Belgium and Northern France, is unusual for a ewe’s milk cheese in its mousse-like texture. It is sweet, grassy and luscious.
Characteristics: pyramid-shaped and blue grey in colour, disguised as a goat’s cheese.
Best with: a cold glass of Sauvignon Blanc or a dry cider.
