Old Winchester is anything but – developed in the noughties when plummeting prices led one dairy farmer to think up alternative uses for his milk, it has become a modern British classic.
Characteristics: very hard, crumbly, Parmesan-like texture; fruity, nutty flavour with a tang from its salt crystals.
Best with: cut through its saltiness with some quince jelly.
