Developed in the 1980s, Harbourne Blue is one of the great modern cheeses made by the Ticklemore Dairy from goats that graze on the slopes of Dartmoor.
Chracteristics: crumbly but smooth texture; rich aroma, clean taste with spicy blue tang.
Best with: works wonderfully well in a winter salad of roast beetroot and walnuts.
