Originally manufactured by medieval Swiss religious communities, Gruyere Reserve is matured for up to 14 months – look for its slightly concave sides to know that you have the real thing.
Characteristics: dark rind, slightly grainy paste due to the salt granules that form during maturation; floral, fruity, nutty and sharp.
Best with: it is the go-to cheese for fondue.
