Flower Marie

Made to a traditional recipe, this sweet ewe’s milk cheese is immediately recognisable by its unusual square shape.

Characteristics: mould-ripened rind with pale yellow paste; soft, sweet, grassy with a zing of citrus.

Best with: it puffs up when baked so try it on top of pizza for a slightly more flavourful alternative to mozzarella.
