Matured for up to a year and a half – twice the length of standard Comté – the cheese is also studded with salt crystals to give it an additional texture.
Characteristics: the familiar nutty flavour but sweeter and with a salty kick; firmer texture.
Best with: this is the go-to cheese if you want to make a soufflé.
