The only other authentic Brie, Brie de Melun’s milk comes from a smaller area than Brie de Meaux and is left to coagulate for longer, meaning it ripens more slowly.
Characteristics: meltingly soft, sunshine yellow interior, strong, pungent, slight saltiness.
Best with: as with its close cousin, Brie de Meaux, it works best at room temperature with very fresh bread and little else to detract attention.
