This is the only Cheshire still to be made using the traditional, clothbound technique and unpasteurised milk – a treat from a bygone age of slow cheese production.

Characteristics: Clean, crumbly with a salt-breeze tang and a top note of orange zest.

Best with: Appleby’s Cheshire’s slight acidity make it a perfect partner with rich cakes and sweet fruits such as figs.
